Shrimp Alfredo

portobello mushrooms, diced

medium shrimp, peeled and deveined

1 teaspoon cayenne pepper, or more to taste

Salt and pepper to taste

1/2 cup grated Romano cheese
|
|
|
chopped parsley, for garnish

Cooking Instructions
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente then drain. Set aside and keep warm.
In a saute pan, melt butter together with the olive oil in a saucepan over medium heat. Stir in onion, and cook until softened and translucent, about 2 minutes. Stir in garlic, red pepper, and mushroom; cook over medium-high heat until soft, about 2 minutes more. Add the cream, white pepper and bring mixture to a simmer, stirring frequently.
Add the Parmesan cheese and simmer sauce oven low heat for 8-10 minutes, stirring frequently, or until sauce has thickened and is smooth. When sauce has thickened add the Mozzarella cheese and stir until smooth. Stir in cayenne, sat and pepper. Add the shrimp, and cook until firm and pink. Serve over hot pasta, garnish with Romano cheese and parsley.
