Broadmoor Tavern Baked Potatoes with Loaded Butter
Ingredients

2 sticks (1/2 pound)

unsalted butter, softened

1/2 cup

sour cream, plus more to taste
|

1/4 cup

chopped cooked bacon, plus more to taste
|

1/4 cup
|
grated cheddar cheese, plus more to taste

2 tablespoons
|
fresh chopped chives, plus more to taste

Russet potatoes, baked
|
Cooking Instructions
Put butter in a medium bowl with the sour cream. Using an electric mixer set on low speed, beat until light and fluffy. Stir in the remaining ingredients. (Vary the ingredients according to your preference.) Season to taste with salt and pepper. Dollop generously on hot baked potatoes.
Makes about 1 1/2 cups.
