Rigatoni with Spicy Tomato Sauce


1 pound rigatoni
2 (28 ounce cans) San Marzano canned tomatoes, crushed by hand
1 ounce tomato paste

8 cloves garlic, chopped
4 ounces extra virgin olive oil
4 ounces white wine
  Chili flakes as desired
8 basil leaves, torn into small pieces
  Parmigiano-Reggiano cheese for grating

Cooking Instructions

1. Cook rigatoni pasta in salted water.

2. Sauté garlic with extra virgin olive oil and tomato paste.

3. Add chili flakes, white wine and canned tomatoes.

4. Add cooked pasta to the pan with 4 ounces of pasta water and cook for one minute.

5. Finish with basil and grated Parmigiano-Reggiano cheese.
