Spicy Grilled Cheese Sandwich


1 6-ounce can tomato paste

3 tablespoons chopped canned chipotle chiles in adobo sauce
1 tablespoon light molasses
12 slices (3/4-inch thick) artisan-style sourdough bread
18 ounces extra-sharp New York cheddar cheese, thinly sliced
4 plum tomatoes, cut into 1/4-inch thick slices
1 small red onion, thinly sliced
1 cup fresh cilantro leaves
6 tablespoons unsalted butter, softened, room temperature

Cooking Instructions

1. In food processor, blend tomato paste, chilies and molasses until smooth. Spread 1 tablespoon of mixture on one side of each bread slice.

2. Arrange 6 bread slices, chipotle side up, on cutting board. Divide half of cheese between the 6 bread slices. Top with tomatoes, then onion, cilantro, and remaining cheese.

3. Top sandwiches with remaining bread slices, chipotle side down. Spread butter on outside of sandwich tops and bottoms.

4. Heat 2 large griddles or heavy-duty fry pans over medium heat. Place 3 sandwiches on each griddle or pan. Cook until bread is toasted and golden and cheese melts, about 5 minutes per side. Makes 6 sandwiches.
