Baked Grilled Cheese and Pesto Sandwich


8 slices whole wheat bread (firm-crumb variety)
3 tablespoons unsalted butter, softened
8 thin slices Swiss, Muenster, Colby or Cheddar cheese
1/4 to 1/3 cup fresh pesto

Cooking Instructions

1. Preheat oven to 425 F. Spread butter on one side of each slice of bread. Spread more thickly at the edges and less in the center.

2. Place half of the slices, buttered side down, on cutting board. Top each with a slice of cheese, a heaping tablespoon of pesto, then another slice of cheese. Top with remaining bread slices, buttered side up.

3. Place sandwiches on heavy-duty jelly roll pan. Bake for 4 minutes on one side. Remove pan from oven. Immediately turn oven up to 450 F. Carefully turn over each sandwich.

4. Bake for another 3 to 4 minutes. Watch the sandwiches carefully so they don't burn. When ready, bread should be toasted and crisp and cheese, melted.

5. Serve immediately. Makes 4 sandwiches.
