Preheat waffle maker. Spray waffle plates with nonstick spray or light coat of oil.
In a large bowl, sift together flour, baking powder, soda, and salt. In a medium bowl, whisk together cottage cheese, milk, eggs, melted butter, honey, vanilla and orange extract. Add wet ingredients to wet, and stir to combine. Add cranberries and fold into batter.
Puree yogurt and cottage cheese in blender for 4 minutes. Put in bowl and stir in buttermilk and vanilla. Sift together flour and baking powder. Whip into buttermilk mixture. Stir in sugared cranberries.
Ladle batter into waffle maker, according to manufacturer's directions, and close plates. Cook 4 to 5 minutes or until golden brown. Continue the same with remaining batter.
In a medium sauce pan, melt butter for sauce over medium heat. Whisk in honey and orange juice. Bring to a low boil. Cook for 5 to 10 minutes until sauce begins to thicken. Stir in orange zest. Serve with waffles.
