In a small bowl, combine cinnamon, ginger, cardamom, turmeric, pepper, 1 teaspoon
salt. Coat the chicken skin with spice mixture. Set aside.
Note: Depending on the size of the skillet, chicken may need to be browned in
batches. Be careful to not over crowd the pan.
In a large, heavy bottomed skillet, heat olive oil over medium high heat. Add chicken,
skin side down, and brown for 6 to 8 minutes. Turn chicken and cook for an additional
3 minutes more, then transfer to a plate. Brown remaining chicken in the same manner.
