Rocky Road Waffle Sundaes - Instructions
In a medium mixing bowl, whisk together the waffle mix and cocoa until well blended. Stir in mini
marshmallows. Stir in the eggs, water, butter, and chocolate all at once, until just blended. Do not
over mix. Let rest for 10 minutes.
Preheat a waffle iron. Be sure to rub oil on griddles to make the waffles easy to release.
Pour the mixture onto the hot waffle iron according to the manufacturer's directions. Sprinkle 1
tablespoon chopped almonds over the batter. Close the iron and cook as directed. Remove the waffle from
the iron. Cool on a wire rack. Repeat with the remaining batter.
For each serving: Place a waffle on a serving plate. Top with 1 scoop of vanilla ice cream. Drizzle hot
fudge sauce over the ice cream. Top with mini marshmallows, chopped almonds, and whipped cream.
Makes 6 to 8 full-size waffles
