Spinach and Bacon Quiche

6 largeeggs, beaten
1-1/2 cupsheavy cream
2 cupschopped fresh baby spinach, packed
1 poundbacon, cooked until crisp and crumbled
1-1/2 cupsshredded Swiss cheese
salt and pepper to taste
1, 9-inchpie crust, unbaked

Spinach and Bacon Quiche - Instructions

Preheat the oven to 375 F. Press pie crust into 9-inch pie plate and crimp the edges.
Set aside

In a large mixing bowl, whisk together eggs, cream, salt, and pepper. Fill prepared
pie crust with spinach, bacon, and cheese and pour the egg mixture over the top. Shake
the pie sharply, but carefully, to settle the ingredients and release any air pockets.
Bake for 35 to 45 minutes until the egg mixture is set. Let cool 5 minutes in pie pan
before serving. Serves 6 to 8.
