Vegetarian Minestrone

2 teaspoonsolive oil
1/2 cupchopped onion
1/2 teaspoondried basil
1/2 teaspoondried oregano
2garlic cloves, minced
1-1/4 cupdiced yellow squash
3/4 cupdiced zucchini
1/2 cupchopped carrot
1/2 cupdiced fennel
1 cupwater
14 ouncesvegetable or chicken broth
5 tablespoonstomato paste
1/4 cupuncooked pasta (small, such as macaroni or shells)
1/4 cupchopped kale
1/2 cuprinsed and drained, canned Great Northern beans
1/2 teaspoonblack pepper
2 tablespoonsAsiago cheese

Vegetarian Minestrone - Instructions

In medium saucepan, heat olive oil and add onion, basil, oregano, and garlic. Sauté 5 minutes.

Add yellow squash, zucchini, carrot, and fennel. Sauté 5 minutes.

Add water, broth, and tomato paste. Bring to a boil and simmer 10 minutes.

Add pasta, return to a boil, then reduce heat and simmer 8 minutes.

Add kale and simmer for 3 minutes or until wilted. Stir in beans and pepper and cook another 2 minutes.

Serve and sprinkle with Asiago cheese.

Makes 4 servings.
