Vegetarian Gravy

2 tablespoonsextra virgin olive oil
2-3 clovesgarlic, minced
1/2 cuponions, chopped
1/2 cupall-purpose flour
2 tablespoonslight soy sauce
1 1/2 cupsvegetable broth
2 teaspoonsfresh sage
1/4 teaspoonground black pepper
1/2 teaspoonsalt

In a saucepan over medium-low heat, add extra virgin olive oil, minced garlic and chopped onion. Cook until the onion is translucent. Add flour and soy sauce to make a paste.

Gradually mix in the broth into the paste, stirring constantly. Over medium heat, bring the gravy to a boil. Season with sage and salt and pepper to taste.
