Rosemary-Garlic Potato Pocket
|2 1/2 pounds||red potatoes cut into 1" chunks|
|2 tablespoons||olive oil|
|3 sprigs||rosemary, 2 chopped and 1 for garnish|
|salt and pepper to taste|
Preheat grill to medium heat.
In a large bowl add potatoes, garlic, olive oil, rosemary, salt and pepper.
Toss to marinate.
Pour the potatoes onto a two layered sheet of heavy duty tin foil, add a sprig of rosemary and fold closed.
Place on the grill for about 30 minutes, turning once half way through.
Before serving cut an X on top of the foil to release any steam and carefully open and serve.
