Pancetta Fava Beans

One slicepancetta, approximately 1/2" thick
3 poundsunshelled fresh fava beans
3 tablespoonsextra virgin olive oil
3 tablespoonsonion, chopped
1/3 cupwater
salt and pepper to taste

Cut pancetta into 1/4" wide strips. Shell the beans and wash in cold water. Cook the onion in the oil until translucent. Add pancetta strips and cook 4 more minutes. Add beans and pepper. Add water and simmer covered 10 minutes. When beans are tender, add salt, and cook until the last of the water has evaporated.
