Edamame Sesame Rice

2 cupswater
1 cuprice
1 1/2 cupshelled edamame, frozen
1 Tablespoonpeanut oil
Salt and pepper to taste
Toasted sesame seeds (optional)

Instructions

Combine first 3 ingredients with a dash of salt, in a large saucepan. Bring to boil over high heat, stirring occasionally. Reduce heat and cover. Simmer about 30 minutes, or until rice is done (cooking time will vary depending on the type of rice used). Use a fork to loosen up rice, add sesame seeds and salt and pepper to taste.
