Okra Fritters

oil for frying
1 poundokra, small chop
1 cupdiced onion
1 cupred bell pepper
1 teaspoonsalt
1/2 teaspoongarlic powder
1/4 teaspooncayenne (optional)
1/2 cupwater
1 egg
1/2 cupall-purpose flour
1 teaspoonbaking powder
1/2 cupcornmeal


Heat 1-inch of oil in a large skillet to 375F .In a large bowl, mix together the okra, onion, bell pepper, salt, garlic powder, cayenne, water and egg. Sift together the flour, baking powder and cornmeal. Combine flour mixture and okra mixture.

Once the oil has reached temperature, drop a scant 1/4-cup of the okra batter into the hot oil. Fry 2 to 3 minutes per side or until golden. Remove from oil and drain on paper towels.
