Corned Beef and Cabbage in a Pressure Cooker
|1||12 ounce bottle of lager beer|
|2||medium onions, peeled and cut in half|
|1||3 pound corned beef brisket with spice packet|
|1/4 cup||beef stock or water|
|4||medium red potatoes, cut into 1-inch pieces|
|4||medium carrots, cut into 1-inch pieces|
|1||small cabbage, cut into wedges|
Add water, beer, onions, garlic, and corned beef with spice packet into pressure cooker. Close the lid and bring to high pressure. Cook for 1 hour. Following manufacturer's directions, release pressure using the natural release method.
Transfer meat to serving plate and cover with foil. Add 1/4 cup water or beef stock to pressure cooker to deglaze pan. Place potatoes, carrots and cabbage in the cooker. Close lid, bring to high pressure and cook for 6 minutes. Following manufacturer's directions, release pressure using the cold water release method.
Slice corned beef against the grain and serve with vegetables on the side. Makes 6 servings.
