Corned Beef and Cabbage in a Pressure Cooker

2 cupswater
112 ounce bottle of lager beer
2medium onions, peeled and cut in half
2garlic cloves
13 pound corned beef brisket with spice packet
1/4 cupbeef stock or water
4medium red potatoes, cut into 1-inch pieces
4medium carrots, cut into 1-inch pieces
1small cabbage, cut into wedges

Instructions

Add water, beer, onions, garlic, and corned beef with spice packet into pressure cooker. Close the lid and bring to high pressure. Cook for 1 hour. Following manufacturer's directions, release pressure using the natural release method.

Transfer meat to serving plate and cover with foil. Add 1/4 cup water or beef stock to pressure cooker to deglaze pan. Place potatoes, carrots and cabbage in the cooker. Close lid, bring to high pressure and cook for 6 minutes. Following manufacturer's directions, release pressure using the cold water release method.

Slice corned beef against the grain and serve with vegetables on the side. Makes 6 servings.
