Kohlrabi and Apple Salad
|3||medium kohlrabi, peeled and julienned|
|2||crisp, red-skinned apples, cored and julienned|
|1/2 cup||walnut halves and pieces, lightly toasted|
|Salad greens or watercress|
|1 tablespoon||fresh lemon juice|
|1/2 teaspoon||granulated sugar|
|1/2 teaspoon||Dijon mustard|
|2 tablespoons||light olive oil|
|2 tablespoons||walnut oil|
|Pinch of celery salt|
|Salt and pepper to taste|
1. In serving bowl, combine kohlrabi, apples and lemon juice from one or two lemon wedges. Toss gently to mix. Add toasted walnuts.
2. Whisk together salad dressing ingredients. Pour dressing over kohlrabi, apples and walnuts. Toss well to mix. Taste and add more salt and pepper if needed.
3. Serve over bed of salad greens or watercress. Makes 4 servings.
