Acai Mixed Berry Bowl

We fell in love with acai bowls on a trip to Hawaii a few years ago and my girls have been addicted ever since. It’s a good thing! Acai berries are rich in antioxidants and anti-inflammatory compounds, so bring on the beautiful breakfast bowls.

Ingredients

1 frozen acai berry packet (try Trader Joe's)
¼ cup frozen zucchini
¼ cup frozen mixed berries
¼ cup frozen pineapple
¼ cup frozen or fresh spinach
1 scoop of vanilla protein powder
1 scoop of collagen peptides
¼ - ½ cup coconut milk (we like canned, not carton)

Directions

Blend with a powerful blender until thick and creamy. Pour into a bowl and top with healthy favorites: drizzle of honey, nut butter, coconut flakes, fresh fruit, nuts, etc.

Recipe Tip!

Wanna know a secret? I add frozen zucchini to our power bowls. I know, right? Zucchini blends like bananas, but with much less sugar. Like spinach, zucchini won’t affect the taste and let’s all shout “hoorah” for extra servings of vegetables first thing in the morning.
