For this recipe, it is crucial to slice the beets thin. Using a mandolin will ensure even slices. The beets do shrink quite a bit in the air fryer, therefore use larger beets in order to obtain larger chips.

Ingredients
2 medium-sized beets
2 teaspoon canola oil
salt
Cooking spray

Directions

Wash and peel beets. Using a mandolin, slice beets 1/16 inch thick. Place beet slices on a paper towel, in a single layer and cover with another paper towel. Press down firmly and let the excess moisture be absorbed about 15 minutes.

Meanwhile, preheat air fryer to 320 for 5 minutes.

Place beets in a bowl, toss with canola oil and salt.

Coat the air fryer basket very lightly with cooking spray. Place beet slices in a single layer and fry for 18-22 minutes, checking and shaking the basket every five minutes to ensure even heat distribution. Once crispy and dry transfer to a stainless steel bowl and cool. Repeat process until you have air fried all the beets.*

Season with additional salt and serve immediately with favorite dip.
