Air Fryer Egg Rolls with Asian Dipping Sauce

Egg rolls are a great way to use up leftovers, either cooked or uncooked. Use any variety of meat, fish or vegetables. You’ll need about 3 to 4 cups of filling to make 8 egg rolls. The filling should be dry and cooled before filling the wrappers, so strain if there is excess moisture. By preparing them in an Air Fryer, you get the delicious crispy shell without the unhealthiness of deep frying!

Ingredients for Egg Rolls

Ingredients
Canola oil
1/2 cup diced onions
1 large garlic clove, grated
1 teaspoon grated fresh ginger
3 cups shredded savoy cabbage
½ cup shredded red cabbage
½ cup shredded carrots
1 scallion, white and light green portions, thinly sliced
1/3 cup diced cooked shrimp, plus 8 whole medium cooked shrimp
2 teaspoons soy sauce, or to taste
Lime juice, to taste
1 egg white
8 egg roll wrappers

Ingredients for Asian Dipping Sauce

3 tablespoons soy sauce
1 tablespoon siracha
2 teaspoons honey, or to taste
1 1/2 teaspoons rice wine vinegar
3/4 teaspoon sesame oil

Directions

For the egg rolls

Heat a light film of oil in a non-stick pan. Add the onions and sauté over medium heat for about 3 minutes or until lightly caramelized. Add the grated garlic and ginger and sauté for another minute.

Stir in the cabbages, carrots, scallion and 2 tablespoons water. Stir over medium-high heat for 2 to 3 minutes until the vegetables are just cooked and the water has evaporated. Remove from the heat. Add the diced shrimp, soy sauce and a squeeze of lime juice and stir to combine.

Beat the egg white lightly with a fork. Lay the egg roll wrappers on the work surface with a point facing you. Brush a lightcoating of egg white around the edges Put a scant 1/3 to ½ cup of filling in the center of the bottom third of the wrapper and shape into a log, leaving at least a ½ inch border on the sides of the filling. Place 1 whole shrimp on top of the filling.

Fold the bottom point facing you up and over the filling, tucking it at the base of the filling. Fold in the two sides of the wrapper and working from the bottom, roll up the egg roll.

Brush all sides of the egg rolls with a light coating of the oil.

Preheat the air fryer to 375˚F. Lay the egg rolls on the screen and cook for 4 minutes. Turn the egg rolls over and continue to cook another 3 minutes or until well browned.

For the dipping sauce

Combine all the ingredients.

Serve the egg rolls with the dipping sauce and enjoy!
