Air Fryer Sweet Potato Fries with Pesto Dipping Sauce

These fries are not only a wonderful accompaniment to a sandwich but stand on their own as a perfect sharing appetizer. Allow 1 hour before cooking to soak the potatoes. Soaking the potatoes ahead of time help to keep a tender interior while the panko and parmesan will create a crispy exterior. Using mayonnaise or labne allows more panko crumbs to stick to the potato making a crunchier exterior.

Ingredients for the Fries

1 large sweet potato or yam, about 1 pound
3 tablespoons mayonnaise or labne
1/3 cup panko crumbs
1/3 cup grated parmesan cheese
¼ teaspoon freshly ground black pepper

Ingredients for the Pesto Dipping Sauce

¼ cup mayonnaise
2 tablespoons pesto, homemade or store-bought
Kosher salt and freshly ground black pepper, to taste
Lemon or lime juice, to taste

Directions

To Cut and Soak the Potato

Cut the ends off the potato. Peel the potato and cut in half through the center. Trim one side and place the potato cut side down (this will stabilize the potato as you cut it). Using a sharp chef’s knife cut ¼-inch thick slices of the potato. Then cut each slice lengthwise into ¼-inch strips to form the fries. Repeat with the other half potato.

Put the potatoes in a bowl and cover with ice water. Soak for 1 hour.

To Make the Dipping Sauce

While the potatoes soak, whisk the mayonnaise and pesto together. Season to taste with salt, pepper,and lemon or lime juice.

To Cook the Fries

Preheat the air fryer for 5 minutes to 350˚F.

Meanwhile, combine the panko crumbs and parmesan cheese in a shallow container. Put the mayonnaise in a bowl.

Dry the potatoes on paper towels. Toss the potatoes with the mayonnaise and transfer them to the panko container, pressing on all sides to allow as much of the panko mixture to stick to the potatoes as possible. Don’t worry about covering the entire potato.

Spread on the air fryer tray and set the timer for 6 minutes. Remove the basket and flip the fries. Continue to cook for an additional 6-7 minutes until the crumbs are browned.

Serve the fries with the Pesto Dipping Sauce and enjoy!
