Almond Butter & Oatmeal Chocolate Chip Cookies

These cookies are chewy, chocolate-y and slightly nutty. They are quick and easy to make, which make them perfect to make with kids. They have a soft, gooey texture that makes them great to use for ice cream sandwiches.

Ingredients
1 cup almond butter, salted
¾ cup light brown sugar
2 large eggs
1 teaspoon vanilla paste
½ teaspoon baking soda
1 cup semi-sweet chocolate chips
¾ cup rolled oats, ground and gluten-free

Directions
Preheat oven to 350 Degrees. Measure almond butter and light brown sugar in a bowl of a stand mixer with paddle attachment. Beat until incorporated and then add eggs, one by one.

Add vanilla paste & baking soda. Mix together and add ground rolled oats and semi-sweet chocolate chips.

Shape and roll into 1.5 inch balls and place them on a parchment-lined sheet pan, 2 inches apart from each other.

Bake for 12 minutes, rotating halfway. Let cool and enjoy!
