Apple Cinnamon Paleo Muffins

Apple Cinnamon Paleo Muffins Recipe

These apple cinnamon paleo muffins might be grain free and dairy free but they are packed with delicious cinnamon and apple flavor! Made with zero refined sugar, these apple cinnamon muffins are great for breakfast or an on-the-go anytime snack.

Ingredients

1 1/4 cups almond flour
3 tbsp flaxseed meal
1 tbsp cinnamon
1/2 tsp allspice
1 tsp baking soda
1/4 tsp alt
1 cup dried apples, diced
3/4 cups egg whites – about 6 large eggs
3/4 cup unsweetened applesauce
2/3 cup creamy almond butter unsalted
1/3 cup coconut palm sugar
1 tsp pure vanilla extract

For the topping:

4 tbsp blanched almond flour
1 tbsp plus 2 tsp coconut oils
3 tbsp coconut palm sugar
1 tsp cinnamon

Directions

Preheat your oven to 375 degrees F and line a muffin pan with liners.


First, prepare the muffin top by combining all ingredients in a medium mixing bowl using a fork and your fingers to create a crumbly mixture. Place in refrigerator while you prepare the muffins.

Using a sharp paring knife, dice your dried apples into tiny bite-sized pieces.

Combine the almond flour, flaxseed, cinnamon, allspice, baking soda and salt in a medium bowl, set aside. In a separate large bowl, whisk together the egg whites, applesauce, almond butter, coconut palm sugar, and vanilla until smooth. Gently stir in the dry ingredients and then fold in the diced dried apples.

Fill each of the muffins about 3/4 of the way. Grab your topping from the refrigerator and sprinkle the top with a layer of the crumb topping, using all of it.


Bake 15, minutes then check with a toothpick. Depending on your oven, you might need about 5 minutes more. Enjoy!

Recipe Tip* These are delicious right out of the oven but for an extra treat, cut the muffin in half, spread with ghee (or butter) and heat up the muffin, butter side down, in a fry pan. Once heated and golden, add some creamy almond butter!
