Blended Coco-Mandarin Peach Margarita

Take a vacation without even leaving your house with this slightly sweet, slightly tart, tropically-inspired margarita made with coconut cream.

Ingredients
1 cup shredded coconut flakes
1 package (16 oz.) frozen sliced peaches
1 cup tequila
1/4 cup triple sec
1/4 cup fresh squeezed mandarin juice
1/4 cup coconut water
5-7 oz. coconut cream

Directions

For Toasted Coconut Flakes
Pre-heat oven to 325 degrees F.

Spread coconut flakes on a baking sheet lined with parchment paper in a thin layer. Bake for 3 minutes.

Stir the coconut with a spatula for even baking and cook another 3-4 minutes.

Remove from oven and set aside to cool.

WARNING: Keep a close eye when baking the shredded coconut; things can go south extremely fast!

For Margarita

In a blender, combine frozen peaches, tequila, triple sec, mandarin juice, coconut water, coconut cream and a couple of pinches of toasted coconut flakes. Puree until smooth and serve up in a martini or coupe glass immediately.

Garnish margarita with toasted coconut flakes and a mandarin wheel. Enjoy!
