Braised Chicken Thighs

Braised chicken thighs are an easy and delicious weeknight dinner. The whole dish comes together quickly and goes great with a simple salad or mashed potatoes.

Ingredients
6 bone-in chicken thighs
3 tablespoons olive oil
Salt and pepper
4 shallots, halved lengthwise
6 carrots, halved lengthwise
2 cups chicken stock
1 cup dry white wine
3-5 fresh thyme sprigs

Directions
Heat Staub Braiser over a medium-high flame. Season chicken thighs generously with salt and pepper on both sides. Add olive oil to the braiser and brown thighs on both sides. Take care to not overcrowd the pan.

Remove thighs and add shallots to the pan. Let the shallots get golden brown on the cut side.

Arrange the thighs, skin side up, and carrots in the pan. Add stock, wine, and thyme and cover. Turn heat to low and let simmer for 25-30 minutes or until the chicken is cooked through and carrots are tender.
