Cast-Iron Chicken Fajitas

For a change from hot dogs and hamburgers, chicken fajitas on the beach is a treat and super easy. We made this beachy summer recipe super minimalist for easy packing but you can make it as fancy and top it up as much as you want. You'll definitely want a cooler for your ingredients and we suggest prepping all ingredients in advance for easy packing and cooking. It might be best to put them in some to-go containers or storage containers as they can serve multiple purposes. They can house your prepped foods, be used as serving containers and can also take home any leftovers.

Ingredients
4 Chicken Breasts
2 Red Bell Peppers
2 Yellow Bell Peppers
1 Large White Onion
2 Cans Beans
8 Flour Tortillas
2 Packets Fajita Seasoning
1 cup of water​
Mild Taco Bell Sauce
1-2 Tbsp Olive Oil
Salt
Pepper
Garlic Powder

Optional Toppings
Cilantro
Pico de Gallo
Avocado
Sour Cream
Tapatio

Directions
Get your grill ready to BBQ.

Prep Your Veggies & Meat (if you haven't pre-prepped at home): Slice peppers and onions into thin slices. Slice onions into thin slices. Slice chicken into thin slices. Prep any other garnishes so they are ready.

Put your black beans and a touch of olive oil in a cast-iron skillet or cast-iron deep skillet and let it cook while you are making the fajitas. Add some salt, pepper and garlic powder to the beans. Put a tablespoon of olive oil in a 12" - 15" cast-iron skillet on the grill and add the chicken. Add some salt, pepper and garlic powder for seasoning. Cook for about 2 minutes each side until they are almost cooked through. Drain excess liquid. Add one more tablespoon of olive oil and add in the onions and peppers. Cook until they are softened but still have a bite to them (about 6 minutes). Add the Fajita seasoning, a little water, and our secret ingredient...Taco Bell Sauce for a little extra flavor. Wait a few minutes for the flavors to absorb. You will need a large serving spoonfor the beansand some bbq tongs for the fajitas.

Serve on a Flour Tortilla and top with your optional toppings. Enjoy while watching the sunset :)
