Cheesy Bean Dip

Ingredients
12 ounces Pepper Jack cheese
12 ounces sharp Cheddar cheese
1 bunch scallions
8 ounces cream cheese, room temperature
9 ounce can bean dip or jalapeno bean dip
8 ounces sour cream
1 ½ tablespoons taco seasoning mix, or to taste
Your favorite hot sauce, to taste
Tortilla chips

Directions
Preheat the oven to 350˚F. Shred both cheeses on a box grater or the shredding blade of a food
processor. Set aside ½ cup of each cheese for the top.

Thinly slice the white and light green sections of the scallions.

Put the cream cheese in the bowl of a stand mixer. Add the remaining ingredients (except the tortilla chips!) to the bowl of a stand mixer. Beat on medium speed until fluffy.

Add the remaining ingredients and mix until well combined.

Transfer the mixture to a baking dish and top with the reserved cheese. Bake for 30 to 40 minutes or until the dip is bubbling and crusty around the edges.

Serve with tortilla chips.
