Chocolate Peppermint Cookie Bars

Makes 48 bars

Ingredients
2/3 cup unsalted butter, softened
2 ½ cups golden brown sugar
3 eggs
1 tsp vanilla paste
2 ¾ cup AP flour
2 ½ tsp baking powder
½ tsp salt
8 oz mint chocolate chips
4 oz dark chocolate chunks
½ cup chopped/crushed candy cane (for garnishing)
1/3 cup dark chocolate chunks, melted

Directions
Preheat oven to 350 F. Grease and parchment line a 17.25 x 11.5 inch rectangle pan.

In a stand mixer with a bowl and paddle attachment, cream butter and brown sugar until light and fluffy, 2-3 minutes.

Add eggs, one at a time until incorporated. Add vanilla paste.

Mix together flour, salt, and baking powder.

Add flour mixture and mix just until incorporated. Add mint chocolate chips and dark chocolate chunks. Mix until evenly distributed and with a spatula, spread evenly onto baking sheet pan.

Bake for 20 minutes, rotating pan halfway through bake time. Bars will be done when golden brown.

Let cool completely. Melt dark chocolate in microwave. Transfer chocolate to a piping bag. Cut a tiny whole at the tip of the bag. Drizzle chocolate over bars and sprinkle with crushed peppermint candies.

Let set in the refrigerator for 10 minutes and cut into rectangles. To yield 48 bars, cut in even rectangles 4 across and 12 down. You can also cut them in squares if desired. I love enjoying these with some hot chocolate.
