Christine and Carla’s Marinara Sauce

You should always have marinara in the house. It's a workhorse that connects the components of a dish and allows you to season it to suit your taste.
¼ cup extra-virgin olive oil
½ medium onion, thinly sliced
Three 28-ounce cans San Marzano tomatoes
1 tablespoon kosher salt
1 ½ teaspoons freshly ground black pepper
6 basil leaves
Heat the olive oil in a large saucepan over medium-high heat, add the onions, and cook until translucent, about 5 minutes. Remove the onions from the oil with a slotted spoon and discard the onions or save them for another use.
Blend the tomatoes and their juices in a food processor for 30 seconds and add to the saucepan with the salt, pepper, and basil. Stir with a wooden spoon. Bring to a boil, then lower the heat and simmer, stirring occasionally until reduced to 4 cups, about 30 minutes.
