Cinnamon Jack O' Lantern Cookie Sandwiches

Cinnamon Jack O' Lantern Cookie Sandwiches

These Cinnamon Jack O' Lantern Cookie Sandwiches are way easier to make than you might think. A sharp paring knife is all you needto cut faces into the pumpkin cookies.

Ingredients

1 1/2 cups salted butter, softened
1 1/4 cups light brown sugar, packed
1 tbsp. pure vanilla extract
2 eggs, at room temperature
4 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp allspice
1/2 tsp salt
12 oz dark chocolate, melted

Directions

Cream together the butter, sugar, and vanilla using either a stand mix or a hand-held mixer. Once fluffy, add the eggs, one at a time, and mix until evenly combined.

Next, add the flour, baking soda, cinnamon, ginger, nutmeg, and salt, beat until combined. (It might not form a ball on its own. That’s OK! Once everything is incorporated, turn the mixer off and roll into a ball.)

Divide the dough in half and flatten each half into a disk. Roll out the dough to 1/4 inch thickness. Use a pumpkin cookie cutter to create your pumpkins. Carefully transfer the cookies to a parchment lined baking sheet. Using a paring knife, carefully cut eyes and a mouth in half the cookies.

Cover the baking sheet and place the sheet in the freezer, freeze until firm, about 15-20 minutes. Roll out the leftover scraps, and repeat with the remaining disk of dough.

Preheat oven to 350 degrees. Bake the cookies on the middle rack of the oven for 8-13 minutes. Cool on the baking sheet five minutes and then transfer to a wire cooling rack to cool completely.

Add butter to a medium pot and melt completely, making sure to not burn. Once melted, remove from the heat and let cool 5 minutes. Brush the butter over the top half of the cookies and then sprinkle the cookies with cinnamon sugar.

To assemble the cookies, spread the melted dark chocolate over the half of the pumpkin/no face cookies. Place the pumpkin faced cookies over the chocolated cookie, gently pressing to adhere. Enjoy!
