Fabulously Faux French Onion Dip

Makes 2 ¾ cups, 6 to 8 servings

This tastes just like the real thing with a fraction of the calories and fat—plus you’re using good, fresh ingredients. It takes a little time to caramelize the onions, but the result is so worth waiting for. Serve it at your next party with pita chips or fresh vegetables.

Ingredients
2 ¼ pounds (5 to 6) onions
1 tablespoon extra-virgin olive oil
Kosher salt
1 teaspoon onion powder
4 ounces low-fat cream cheese, at room temperature
½ cup Greek yogurt
Flat-leaf parsley leaves
Baked pita chips

Directions
Peel the onions and thinly slice into 1/8-inch thick half-rounds.

Heat the olive oil in a large sauté pan over medium heat. Add the onions and 1 teaspoon of salt. Stir well, breaking up the rings a bit. Continue to cook, stirring regularly, lowering the heat as needed to keep from burning, until light to medium golden brown and caramelized, 20 to 30 minutes.

Let the onions cool completely.

Transfer the onions to a food processor. Pulse a few times until coarsely chopped. Remove half of the onions to a mixing bowl.

Put the onion powder in the food processor and blend until the onions are completely smooth. Add the cream cheese and yogurt, and process until just smooth. Transfer to the bowl with the chopped onion mixture and stir well. Season to taste with salt.

Refrigerate for several hours or overnight until cold.

To serve: Transfer the onion dip to a serving bowl. Garnish with the parsley leaves and serve with pita chips.
