Garlic Mashed Potatoes

Like all good French cooks, my Aunt Aimée, who was famous for her garlic mashed potatoes, knew that the secret to adding rich, well-balanced garlic flavor without overpowering the potatoes themselves is to simmer whole garlic cloves along with the potatoes, so that the garlic’s pungent flavor mellows and gets thoroughly infused. For the best texture, mash the potatoes just after draining, while they are still hot.

Cooking Notes: If you prefer a smoother potato purée, use a food mill or potato ricer, which will give you the added advantage of not having to remove the skin from the garlic cloves.

Save the potato water like my thrifty mom always did; it makes a nice addition to soups and stews, adding a bit of thickness and flavor and a rich, glossy sheen. This recipe doubles easily if you are serving it with my turkey and stuffing.

Ingredients
2 pounds Yukon gold Potatoes, peeled and cut into 2-inch pieces
4 garlic cloves, peeled (see cooking note)
Kosher salt
1 cup whole milk
1/4 cup unsalted butter
Freshly ground black pepper
Coarsely chopped parsley, optional

Directions
Put the potatoes, garlic, and 1 teaspoon of salt in a large pot. Cover with water and bring to a boil. Lower the heat and simmer until the potatoes are tender, about 25 minutes.

Meanwhile, warm the milk and butter in a small saucepan.

Drain the potatoes (reserving the water if you like, see cooking note) and return to the pot. While using a potato masher, gradually add the warmed milk and butter. Once you reach your desired texture, season to taste with salt and pepper.

Alternatively, for a smoother purée, the potatoes can be put through a food mill or ricer into the pot, and then the warmed milk and butter added.

Garnish with parsley, if desired.
