Grilled Asparagus with Prosciutto and Meyer Lemon Vinaigrette

My eyes popped out when I saw the jumbo spears of asparagus that inspired this recipe. Their sweet juicy flavor lived up to their gorgeous appearance. You can use thinner asparagus but avoid pencil as they have a very grassy flavor that turns bitter on the grill.

Ingredients
1 tablespoon minced shallot
3 tablespoons freshly squeezed lemon juice, preferably Meyer lemon juice
Kosher salt
Freshly ground black pepper
Extra-virgin olive oil
1 pound jumbo asparagus
8 pieces thinly sliced prosciutto

Directions
Preheat a grill or a grill pan on the stovetop to medium heat.

For the Vinaigrette
In a small bowl, combine the shallot and lemon juice and season with salt and pepper. Let sit for 10 minutes to allow the salt to dissolve and the flavors to develop. While whisking constantly, drizzle in ½ cup of olive oil. Put the vinaigrette in a large bowl (the asparagus will be tossed in it) and set aside for up to 2 hours.

For the Grilled Asparagus and to Serve
Snap off the ends of the asparagus stems by holding the spear at both ends and bending gently. The end will naturally break off at the point where the spear becomes tender. Trim and discard the ends.

In a large bowl, toss the asparagus with olive oil and season with salt and pepper. Grill until they are caramelized, bright green and tender, turning occasionally, 8 to 10 minutes. Remove from the grill and cool to warm. Toss with the vinaigrette and arrange on a platter. Serve extra vinaigrette on the side or drizzle over the top. Place ruffles of prosciutto on the platter or on a separate plate.
