Grilled Bruschetta with Aged Balsamic

Grilled Bruschetta with Aged Balsamic Recipe

It’s almost the end of the year for harvesting fresh tomatoes. I wanted to make this dish more rustic, so I decided to flash sear the baguette for more texture, color, and flavor. You can use the broiler if it’s easier or you don’t want to start the barbecue for an appetizer.

Ingredients

6 medium-large sized tomatoes
4 tablespoons chopped basil
4 tablespoons olive oil, 1 ½ tablespoons reserved
1-2 cloves garlic
1 thin baguette
¼ or less teaspoon sea salt
1/8 teaspoon coarse black pepper
1 tablespoon (eyeball it) aged balsamic

Directions

Fire up the grill!

Dice the tomatoes and put in a bowl.

Add the chopped basil, salt, and pepper, along with finely chopped garlic.

Drizzle the 1 ½ tablespoons of olive oil over this mixture, set aside.

Cut the loaf in half lengthwise and use the remaining olive oil to brush both sides of the bread. Once the barbecue is nice and hot, place the bread on the grill and leave for about 1 - 1 1/2 minutes depending on the heat, flip and char the other side as well.Pull the bread from the grill after both sides are toasted.

Spoon the bruschetta and even a little of the juice as long as the bread is crisp (otherwise don’t use to avoid getting soggy).

Very lightly drizzle the balsamic on top. Cut with a serrated knife into handheld pieces and enjoy!
