Grilled Crostone with Ricotta, Fava Beans, Asparagus, Mint and Meyer Lemon

Certain flavors are just meant to be together. Each ingredient plays off another to perform that ideal bite that you just can’t get enough of. This recipe is a compilation of that ideal.

Ingredients
8 ounces English peas in the pod
8 ounces fava beans
4 asparagus spears
½ loaf day-old rustic Italian bread
Extra-virgin olive oil
Kosher salt
20 mint leaves, chopped
Freshly ground black pepper
4 ounces fresh ricotta cheese
Zest of 1 lemon, preferably a Meyer lemon
Maldon salt

To Prepare the Vegetables
Shell the peas and shuck the fava beans.

Trim and discard the ends from the asparagus. Cut the asparagus into ¼-inch slices on the diagonal.

Bring a large pot of salted water to a boil. Fill a bowl with ice water.

Put the peas into a strainer and plunge into the boiling water to cook the peas until just tender, about 2 minutes. Lift the strainer and dip into the ice water to chill the peas. Drain on paper towels.

Repeat with the fava beans and the asparagus, keeping them separate, 2 to 3 minutes per batch.

Peel and discard the outer skin from the fava beans.

To Grill the Bread
Heat a grill pan to medium-high heat for the toast.

Slice four ½-inch-thick slices from the bread, brush with olive oil, and season lightly with salt. Grill until crispy on both sides.

To Serve
Toss the English peas, fava beans, asparagus and chopped mint with 2 tablespoons of olive oil and season with salt and pepper.

Spread the ricotta generously over each piece of grilled bread and then pile a large spoonful of the vegetable mix on top. Garnish with the lemon zest and a sprinkle of Maldon salt.
