Mini Caprese Skewers with Balsamic Drizzle



Tomatoes and basil are especially delicious during the summer months. You can assemble these Caprese skewers in less than 20 minutes for the perfect summer snack or BBQ appetizer.

Ingredients
One package of grape tomatoes
One package of mini mozzarella balls
Fresh basil, about 10-12 leaves
1 cup balsamic vinegar
Salt & pepper
Thin skewers or toothpicks

Directions

In a saucepan, bring one cup of balsamic vinegar to a boil in a saucepan.

Once you reach a boil, reduce the heat to medium and simmer until it's the consistency of very thin syrup. After about 10-12 minutes, turn off heat and let it cool.

Thread a cherry tomato, basil leaf (fold or cut in half, lengthwise, if large), and a mini mozzarella cheese ball, another basil leaf, and another tomato on a skewer or toothpick. Repeat this sequence using up all of your ingredients.

Sprinkle with salt & pepper, then drizzle cooled balsamic reduction on top and enjoy!
