Mushroom & Chicken Lettuce Wraps

Mushroom & Chicken Lettuce Wraps

This is a very simple, but delicious dish with a few sauce options that can really elevate the flavor. The lettuce wraps can be served along with or after our veggie spring rolls. Both dishes compliment each other nicely. The more sauce you use, the messier it gets, but that’s part of the experience!

Ingredients

2 skinless and boneless chicken breasts (about 16 oz)
2 cups crimini mushrooms finely chopped
2 cloves garlic, finely chopped
1 shallot, finely chopped
1/2 inch grated ginger
6-8 ounces finely chopped water chestnuts
3-4 ounces finely chopped bamboo shoots
1 tablespoon sesame oil
1/4 teaspoon white pepper and 1 pinch
1/8 teaspoon sea salt and 1 pinch
6-8 pieces of iceberg lettuce
1-2 tablespoons Thai basil julienned

Wet Ingredients

1 1/2 tablespoons rice vinegar
1 teaspoon low sodium soy sauce
1/2 teaspoon brown sugar
1 teaspoon Hoisin
1/4 teaspoon sesame oil

Directions

Saute the chicken and mushrooms, garlic, and shallot in the sesame oil with a pinch of salt and pepper until it’s just cooked through (about 6 min per side, depending on thickness) and pull from heat. The mushrooms should reduce in size and have a darker hue to them. Let the chicken cool enough to avoid shredding it when dicing into small pieces.

Add the remainder of the dry ingredients (except the basil) in a large bowl and mix with hands to incorporate.

Add the wet ingredients into a bowl and mix with a small whisk or fork. Drizzle this over the dry ingredients and mix in with the finely diced mushrooms and chicken. Return all ingredients to medium heat for just 1-2 to heat up (be careful not to overcook the chicken here).

Spoon even amounts of the mixture on 6-8 lettuce cups, top with the basil.
