Philly Cheesesteak Sandos with Sautéed Peppers, Onions and Mushrooms with a Provolone Cheese Sauce

Recipe for 7 (very easy to adjust per size of the party)
Prep: 1 hour (depending on how many peppers and onions need to be sliced), Cheese sauce: 15 min
Level: Easy

This is a great recipe for not missing out on a game. If you love onions, add more, same with any of the ingredients used! This pairs well with the “Philly” Eagles Super Bowl 52 Victory!

1 ¾ pounds Rib Eye (¼ lb of thinly sliced rib eye per person. Ask the butcher to slice it for you so you don’t have to deal with freezing meat and then cutting it)
1-2 Teaspoons Worcestershire

Cheese Sauce
8 ounces provolone
¼ cup butter
4 tablespoons flour
1 teaspoon chili powder
1 cup half & half
1 cup milk
Salt and pepper to taste

1 Red Onion, thinly sliced
1 Yellow Onion, thinly sliced
1 Yellow Pepper, Julienne Sliced
2 Red Peppers, Julienne Sliced
1 Green Pepper,Julienne Sliced
(Roughly 1/2 bell pepper & 1/3 of a medium sized onion per person)
Olive Oil
1-2 Tablespoons Worcestershire
1-2 Cloves Minced Garlic
Salt and Pepper

7-8 Soft Sour Dough Rolls
Olive Oil

​Saute peppers and onions in olive oil with 1-2 tablespoons of Worcestershire, with 1-2 cloves minced garlic, salt and pepper. Saute until the peppers still have a little bit of texture,

Cheese Sauce
Add the butter and flour in a pot (creating a roux), add the half & Half and milk, then the spices, bring to a boil and slowly work in the provolone, reduce to a simmer.Add more milk or flour to get the consistency you desire.

Heat up a flat top to med-medium high heat, cook about 60 seconds on each side, drizzle Worcestershire (about 1-2 teaspoons) over the meat while hot and set aside

Cut rolls lengthwise, brush with olive oil and heat up on flat top or grill

To Serve
Add meat to the roll, scoop the peppers, onions, and mushrooms in top and then ladle the hot cheese sauce.Place the top of the roll on the sando and eat while hot (with 95 napkins).
