Pressure Cooker Chocolate Pecan Brownie

This chocolate pecan brownie is the perfect date night dessert. Using a pressure cooker yields a moist, rich, dense and fudgy brownie. A pressure cooker is great to use on hot days when you don’t want to turn on your oven!

Ingredients
¼ cup coconut oil, melted, can use butter if preferred
½ cup light brown sugar
¼ cup cocoa powder, unsweetened
1 large egg
¼ teaspoon vanilla paste
¼ cup all-purpose flour
1/8 teaspoon baking powder
¼ teaspoon salt
1/2 cup chopped pecans
½ cup semisweet chocolate chips

Directions

If coconut oil is hardened, melt in a microwave safe bowl in ten-second increments until melted.

In a stainless steel bowl, using a wooden spoon, mix together coconut oil and brown sugar. Once all oil is incorporated add egg and vanilla paste. Whisk until fully incorporated.

Add cocoa powder and mix. In a separate bowl whisk together flour, baking powder, salt, pecans, and chocolate chips. With a wooden spoon, stir and mix until all items are evenly incorporated.

Grease a 5-inch springform pan and pour brownie batter into it. Using an offset spatula, spread into an even layer. Cover with foil.

Place a small glass bowl upside down in pressure cooker and add 1.5 cups of water. Place brownie pan on top of a glass bowl and lock pressure cooker. Make sure the pressure valve is closed. Using the manual setting, pressure cook for 40 minutes. Once the timer goes off, wait for 15 minutes before releasing steam from the pressure cooker.

Let cool for another 15 minutes before eating Serve with ice cream and chocolate sauce.
