Simple Breakfast Quesadilla

Have 10 minutes to make breakfast but want something that makes your mouth happy with joy? Try our Simple Breakfast Quesadilla. Most of these ingredients you will have right at home. Plus this takes little prep and clean up. Win, win!
2 Corn Tortillas (or sub for small flour tortillas)
1/2 cup (approx) Cheddar Cheese (or any cheese you love)
Salsa (we used Tomatillo Salsa)
Labneh (or sour cream)
Place one tortilla in your pan (ideally cast iron) over medium-high heat. Add your cheese on top and then place the second tortilla on top of the cheese. Let it cook for about a minute and a half before you flip it. While the tortilla is cooking, use a non-stick pan to cook your egg. You can make your egg how you prefer (we love it over medium). If you would like to cook it over medium, make sure the pan is on Medium-High. Let the egg cook for about 1.5/2 minutes on each side.
Pull off the quesadilla, top with salsa, sliced avocado, Labneh (or sour cream). Add your egg on top and cut through the middle to get the yolk to spread. Enjoy!
For those of you that enjoy spice, we would definitely top with some hot sauce (we LOVE the Cholula Green Pepper on this one).
Fancy me up: If you want to fancy this quesadilla up, add in some caramelized onions and bacon bites to the quesadilla. You won’t regret it.
