Steamed Artichokes With Dips Galore

Artichokes are so delicious, the hardest part is waiting for them to steam so they can be enjoyed.

Ingredients

3-4 medium sized artichokes
1 Garlic Clove

Directions

Clean up the artichokes by cutting the really sharp pieces of the leaves off (just the prickly part, no need to cut the leaves).

Fill a large pot with water and 1 garlic clove until the water is just shy of the steam pot inside. Add the artichokes into the pot, stem down (if possible). Steam on med-high heat with the lid on. This will take 45 min, depending on the size of the artichokes.

If you can easily pull a leaf off, remove from the pot and let cool, otherwise continue to steam until this is possible.

Dips Galore

To start, pick your base:
3/4 cup of either Mayo, Balsamic, Goat Cheese, Lebneh or Butter

Then:
Add 1/2 garlic clove, minced (or one teaspoon of minced garlic, from the jar)
Add about a 1/2 of a lemon's worth of juice
Pinches of Salt and Pepper

Mix thoroughly.

Make as many combinations as you want to have some fun with the artichoke eating experience. All of them will taste incredible but if you want to get a little more crafty, try this lemon-dill dip!

Lemon-Dill Dip

Ingredients

1 1/2 garlic cloves
1 1/2 cups mayonnaise
Juice of 1 lemon
1/8 teaspoon salt
1 teaspoon fresh dill finely chopped or 3/4 of a teaspoon dried dill

Directions

Add the 1/2 garlic clove (pressed) to a bowl with the remaining ingredients.

Stir with a fork or small whisk and refrigerate.

We like to make the dip prior to steaming the artichokes or even the morning of so the flavors are integrated better.

As soon as the artichokes are fully steamed and cooled, serve alongside with the dip and enjoy!!!
