Tamarind Glazed Pork Shoulder

I am often seduced by ethnic markets. I’ll buy something that looks interesting either in shape, packaging or color even if I’m not familiar with the language or the product. It’s led to many happy accidents like this pork shoulder. It’s tangy and sweet with the lip-smacking distinct taste that only tamarind can provide.

Ingredients
Glaze
¾ cup tamarind paste
¾ cup water
¾ cup packed palm sugar or brown sugar
½ cup fish sauce
2 large garlic cloves, minced
1 tablespoon minced ginger
1 teaspoon crushed red pepper flakes, optional

Pork
One 4-to 6-pound boneless pork shoulder

Directions
For the Glaze
Mix all the glaze ingredients together in a small saucepan. Bring to a boil, reduce the heat, and simmer for 10 minutes on low. Cool completely. The glaze can be stored in an airtight container in the refrigerator for up to 2 weeks.

For the Pork Shoulder
Preheat the oven to 425˚F.

Trim the excess fat from the pork shoulder. Score the fat side with a sharp knife to create a diamond patter. Set the shoulder in a roasting pan and brush generously on all sides with the glaze, reserving any remaining glaze. Roast in the oven for 30 minutes.

Lower the oven temperature to 325˚F. Remove the pan from the oven. Cover and seal with aluminum foil, then continue to roast until the shoulder is very tender and pulls apart evenly, about 4 hours.

Remove the pan from the oven, uncover, and carefully transfer the pork shoulder to a serving platter.

Strain the pan juices into a small saucepan and spoon off the fat. Add the reserved glaze and simmer over medium heat until it is slightly thickened, about 10 minutes.

Pull the shoulder apart and serve with the glaze on the side.
