Three Bean & Beef Chili

Three Bean Beef Chili

Level: Easy

When this three bean beef chili won our office chili cook-off, we knew we had to share! This chili packs just enough heat and the beans make it super filling. Try over rice or simply pile on your favorite toppings!

Ingredients

2 lbs. ground beef (80/20)
2 cups chopped yellow onion
1 ½ cups chopped bell pepper, any color
4 cloves garlic, minced
2 - 15 ½ oz. cans diced tomatoes
2 – 15 oz. cans tomato sauce
2 – 15 ½ oz. cans dark red kidney beans, drained & rinsed
1 – 15 ½ oz. can black beans, drained & rinsed
1 – 15 ½ oz. can cannellini beans, drained & rinsed
4 teaspoons chili powder
2 teaspoons ancho chili powder
1 tablespoon cumin
¼-½ teaspoon cayenne pepper
2 teaspoons dried basil
1 teaspoon salt
1 teaspoon pepper

Directions

Brown ground beef in large skillet.Drain fat. Add beef to large pot.

In a large skillet, add some olive oil and onions and peppers. Cook until softened.

Add garlic when vegetables are almost finished cooking, and saute another minute or two. Add vegetables to pot.

Turn pot to medium-high heat and add tomatoes, beans, and sauce. Stir in both chili powders, cumin, basil, cayenne (depending on how spicy you like it,) and salt and pepper. Bring to a boil, then reduce heat and simmer for about 30 minutes. Add more salt to taste if needed.

Delicious served over white rice with all your favorite toppings!
