Tony’s Homemade Tomato Sauce

Makes 4 ½ cups

My sauce is always about the tomatoes, not the spices. It’s lightly seasoned, not cooked down, so that you can taste tomatoes.

Ingredients
1 can (28-ounce) ground tomatoes
1 can (12-ounce) tomato paste
½ teaspoon dried oregano
½ teaspoon fine sea salt
1 teaspoon extra-virgin olive oil
2 basil leaves, torn in half

Directions
Combine the ground tomatoes, tomato paste, oregano, and salt in a deep bowl and purée with an immersion blender. Keep the blender below the surface of the tomatoes as much as possible to avoid incorporating too much air, which could lead to the sauce spoiling more quickly.

Stir in the olive oil and the basil.

The sauce can be used right away or transferred to an airtight container and refrigerated for up to 3 days.
