USA Fruit Cookie Pizza




This fresh cookie pizza screams U-S-A! Fresh strawberries, blueberries, raspberries, and blackberries pair perfectly with the lemony cream cheese frosting. Easily prepare the cookie beforehand and assemble your fruity work of art right before the party. Grab a slice quick though... this patriotic dessert won't last long!

Serves 8-13 (depending on slices!)

Ingredients
1 package or batch of sugar cookie dough
1 package cream cheese, softened
2 cups heavy cream
1 cup powdered sugar
1 teaspoons lemon zest
1 cup strawberries, sliced
1 cup blueberries or blackberries

Directions

Preheat the oven to 350°F. Form the cookie dough into a large ball, then roll out into a flat circle on a pizza stone. The cookie will expand as it cooks so be sure to leave some room from the edges.

Bake for 15-17 minutes or until the crust turns slightly golden.

While the cookie crust is baking, whip the cream cheese with a stand mixer or a hand mixer for 2-3 minutes on high until it is smooth. Once smooth, add the powdered sugar and mix until incorporated.

In a separate bowl, whip the heavy cream until it becomes stiff and peaks form. This should take about 5-8 minutes if using a stand mixer. Gently fold the whipped cream into the cream cheese.

Add the lemon zest. and well until it's smooth and creamy. Cover and let chill in the refrigerator.

Remove the cookie crust from the oven and let it cool completely. Once it's cool, spread the cream cheese/whip cream mixture over the entire crust.

Let your creativity flow and create a 4thof July/USA pattern using strawberries and blueberries. Raspberries and blackberries also work great!

Serve immediately. Leftovers (yeah right!) can be preserved in the refrigerator for up to 3 days.
